"Bistros likely developed out of the basement kitchens of Parisian apartments where tenants paid for both room and board. Landlords could supplement their income by opening their kitchen to the paying public. Menus were built around foods that were simple, could be prepared in quantity and would keep over time. Potato Galette - A Classic French Garnish



Hard to believe this is created with only pototo and butter. Yummy! Consisting of potato and butter, this garnish needs to cook slowly. It is especially suitable as a garnish underneath meat stews, such as Beef Bourguignon.

"Galette is a term used in French cuisine to designate various types of flat round or freeform crusty cakes, similar in concept to a Chinese bing. One notable type is the galette des Rois (King cake) eaten on the day of Epiphany. In French Canada, the term galette is usually applied to pastries best described as large cookies."
